Pasta Sauce: Simple, Delicious & Versatile

You must know this by now, I like recipes that can be used for multiple meals. This pasta sauce is a winner because I use it not only for spaghetti, but also on my Gluten-free Pizza Crust, Lasagna (recipe to come!) and even on Meatloaf! It's extremely simple and this base recipe can be adjusted to each family's preferences. It's clean and healthy and loaded with nutrients. If you are one of those parents who is always trying to get your kids to eat more veggies, this is one way to sneak them into their diet.

1-2 Tbs. Extra Virgin Olive Oil (For sauteing veggies)
1 Bottle Strained Tomatoes. (I use Bella Travola brand & then reuse the glass bottles for Almond Milk!)
1 Can Diced Tomatoes
1 Can Tomato Paste
1 c Diced Mushrooms
1 Pepper, diced (Red, Orange or Yellow)
1 Onion, diced
1 Tbs Italian Seasoning
2 Cloves Garlic, diced

Heat the olive oil in a pot/dutch oven over medium heat.
Add the onions, pepper and garlic and saute for a few minutes until onions become transparent.
Add the mushrooms and saute for a couple more minutes.
Add the Italian Seasoning and tomato paste, mix well.
Pour in can of diced tomatoes with all the juices and the entire bottle of strained tomatoes.
Increase heat to high and bring to a boil.
Once boiling, reduce heat to low/med-low and allow to simmer, stirring occasionally for about 10 minutes.

Make this sauce your own by adding different spices, meat, veggies, sweeteners etc.
  • Zucchini can and should be one of the vegetables you try!
  • For meat sauce: brown some ground beef/chicken/turkey and add to the pot. (I had success using this over homemade gluten-free Panzerotties!)
  • The more filling vegetables you add, the more you will have on hand for various meals throughout the week.
